This is an almost no cook recipe I like to throw together for lunch but it would be a great easy dinner after a busy day too.

I sautéed the whole bag of veggies for just me. You could save some money and chop up your own but I wanted quick today. I wasn’t sure what all was in their sauce so I tossed it in the trash and made my own with this skinny girl sauce. It’s pretty good and similar to what was in the pouch without all the sugar.

When the noodles were boiled I tossed them in with the veggies. Removed from heat and added the smoked salmon gave it all a toss and voila.

I needed some more fat in my day so I made sriracha mayo for more sauce. Added sesame seeds and sushi ginger for funsies.
