How To Make It
Method
- 01
Preheat oven to 400 degrees. Mash banana into a small bowl, add liquid egg whites, oats, cinnamon and swerve.

Pour batter into a giant muffin tin dividing 1 portion between two cups. I use a 6 muffin silicone pan.

Bake for 13-18 minutes depending on how done you want your muffins. This is a very wet batter. A toothpick inserted in the center should come out clean when they’re done.

Allow to cool, run a knife around the edges to loosen and push the bottom of the silicone pan to help remove. They’re very delicate with all those egg whites.

Combine sauce ingredients into a bowl and use to top muffins with “frosting”. I prefer to eat these by pulling off chunks and spreading the “frosting” on each bite. You could also just break them up into the “sauce”. Whatever you like it’s so darn delicious!
